Laboratory of Flavours and Metabolites
The compounds naturally occuring in agricultural products (apples, apple juice, grapes, wine, cheese, milk) and in plant organs (leaves, roots, wood) are determinated in the Laboratory of Flavours and Metabolites.
Modern analytical methods are used to assess quality, characteristics, and purity.
Instrumentation
The laboratory is equipped with modern analytical instruments, for example, gas chromatography (GC) and liquid chromatography (LC) coupled with mass spectrometry (MS), as well as standard analytical technologies.
The laboratory also benefits from so-called high-resolution mass spectrometers to identify unknown compounds and analyser like Near-Infrared Spectroscopy (NIRS) for non-destructive tests.

The laboratory is located at the NOI Techpark in Bolzano/Bozen Sud, Building A2, Via A.-Volta 13/A, 39100 Bolzano/Bozen.
