Enology Research Area
The Enology Research Area serves to support winemaking in South Tyrol through applied research and consulting. Researchers perform experiments in the winery, testing wine production processes and offering enology consulting and specialist training.
A key area is the study of the influence of winegrowing practices on grape quality. In this context, the staff in the Enology Research Area study the connection between winemaking interventions and the taste of the wines. This includes studies of soil vocation for individual grape varieties and tests of the quality of wine made from new vine clones.
To make the most of the potential of intrinsic grape quality, vinification and wine ageing processes are analysed and optimised in the experimental winery. The focus is mainly on the characteristic quality, mouthfeel and conservability of the product. In-depth chemical analysis and sensory evaluations by tasting groups guarantee a precise assessment of the results.
With this research, the Enology Research Area makes a decisive contribution to the continued improvement of wine quality and the innovation of the winemaking sector in South Tyrol.

Vinification and Viticultural Issues Working Group
There are many vineyard cultivation processes that influence the quality of the grapes. It is therefore essential to take a detailed look at the relationship between the agronomic measures undertaken and their effects on the analytical and olfactory profile of the wine.
Scope of activities:
- Studies on soil vocation for the cultivation of international and native vines.
- Analysis of the suitability of new varieties for cultivation in South Tyrol.
- Selection of new clones of native varieties for improvements to quality.
- Quality assessment of wine obtained from new clones.
- Study of the effects of using plant protection products and resistance activators on the fermentation and quality of wine.

Enological Processes Working Group
To make high-quality wines, it is essential to make full use of the quality potential of the grape. To do so, it is necessary to optimise vinification processes, placing particular attention on improving the typical characteristics, mouthfeel, and preservability of the wine over time.
To achieve these aims, the following research activities are performed:
- Experimental vinification of a wide range of wines
- Chemical testing to identify the composition of the wines
- Sensory evaluation by tasting groups
- Study of fermentation behaviour during micro-vinification
Scope of activities:
- Optimisation of alcoholic and malolactic fermentation
- Optimisation of red wine vinification processes
- Evaluation of new technologies to clarify and stabilise wine
- Mitigation of carbon footprint using targeted enological practices
- Quality evaluation and selection of varieties and grapes
- Bespoke consulting for wine production and improved quality
- Organisation of refresher courses and enological competitions
